WHAT DOES THE ABBREVIATION HACCP STAND FOR?B>
The abbreviation HACCP stands for an English definition ( HAZARD ANALYSIS AND CRITICAL CONTROL POINTS), który tłumaczy się jako Analiza Zagrożeń i Krytyczne Punkty Kontroli. HACCP is a system of work arrangement that helps to maintain health safety of food in the companies that dealing with food products. The system is recognized as the most effective tool that ensures the guarantee that food will not be contaminated or polluted and will be safe for the consumer.
The ordinance no 852/2004/WE of 29 April 2004 pertaining to food hygiene have been in force in Poland since 1 January 2006.
The ordinance imposes the obligation to implement and use the principles of HACCP system on entrepreneurs dealing with production, distribution, warehousing, transportation and supplying food to consumers.
GMP/GHP PRINCIPLES THAT ARE TO BE IMPLEMENTED PRIOR TO HACCP INTRODUCTION.
Prior to implementation of the HACCP system in a company, the principles of
GOOD MANUFACTURING PRACTICE (GMP) and GOOD HYGIENE PRACTICE (GHP), that aim at creation of conditions necessary to manufacture food safe as regards hygiene should be implemented.
The principles relate, among others, to rooms, machines and appliances, waste disposal, washing, water supply, obtaining raw materials, personal hygiene as well as staff training.

actual condition of a building, - guiding activities connected with HACCP implementation. 2. Determining the detailed action plan. 3. Appointment of HACCP team and principles of its operation. 4. Training of HACCP team on Good Hygiene Practice, quality systems and Polish food law regulations (circa 3-4 hours). 5. Defining system verification. 10. Defining the method of documentation and record management. 11. Complaint procedures. 12. HACCP system documentation preparation in order to obtain the certificate compliant with EU standards.
